Senior Regional Associates Mr. Jon Holand, Mr. Max Gonella and Associate Mr. Darrly Viojan hosted a Private Client Wine Dinner at Purple Onion in association with The Wine Republic. Manager, John O’Toole along with the team from David Laris Creates tailored a delicious mix of Mediterranean and Italian cuisines while Campbell Thompson from The Wine Republic paired the wines.
The dinner started with oxtail raviolis with goat’s curd and pink peppercorn, mussels steamed with shallots, white wine, and herbs and chicken brodo with jerusalem artichoke tortellinis, pecorino and truffle oil. The main course followed with a selection of confit lamb pie served with a roast garlic potato mash and green salad, smoked golden trout with chorizo and cider or tomato tartatain with balsamic shallots and marinated feta.
The wines paired by The Wine Republic included Australian Wild River Sparkling, Spanish Veiga Serantes Albariño, Australian Little Yering Pinot Noir and Australian Tedeschi Valpolicella Classico Superiore DOC. The meal ended with a rich choc fondant sandwiched between brittle choc pastries with clotted cream, bread and butter pudding served hot with brandy cream and bombillini with chocolate and moscatel.
